Hi Sarah! Thanks for your lovely review - and for reading our book. Salt is mainly *just* sodium (minerals thrown in there for good measure, too). BUT, it's also so much more than that, isn't it? Just like an underripe, pale tomato from the big box store in January *is* a tomato - so is the fresh, backyard summer heirloom tomato still warm from the sun *just* a tomato. How can that be, that these two are the same thing, yet worlds apart in terms of flavor, beauty, feeling? We believe it's the same with salt - and any handmade, all-natural foods. Anyway, have fun in Europe!
Lovely atmosphere. Amazing products. Unique and singular quality. I never thought of giving rare salts as a present but my nephew, a trained cook, appreciates subtleties in flavors.
Gave this to my good friend who loves to grill. She has used about half of them and loves them all! Great flavors, not too strong, and enhances whatever she putting on the grill.
