This Madagascar pepper has small, oval shaped berries with pronounced stems tapering from one end to the other. The name ‘Voatsiperifery’ is derived from the Malagasy words Voa, meaning “the fruits”, and tsiperifery, meaning pepper vine. The vines grow to heights of 20 meters, using the trunks and branches of trees for support. Fruits emerge along newer shoots and are harvested just once a year. Only 1,500 kg are harvested annually, making these fragrant peppercorns relatively rare, even in Madagascar.
Flavor Notes: Earthy and wood-like, with citrus and flowery notes adding nuance and freshness. The finish is particularly long, radiating across the palate for minutes after they are gone from the mouth.  The effect is intoxicating with with lamb or pork, and a revelation for stone fruits and chocolate.
