Why spices?
Behind every spice is a story. Within every story is a meaning. Locked up in every meaning is a sliver of intimacy between you and the surrounding world. When we understand spice this way, as connection, we cook food more lovingly, share more deeply, and enjoy flavor more lustily.
The hallmark of The Meadow's new and growing family of spices is our fixation on connection. We source spices that don't just taste spectacularly good, they are meaningful to us. Every spice is a story, a tapestry woven of personal relationships, environmental stewardship, exotic adventure, and the joy of fragrances filling the home as we pulverize fresh ingredients with our own hands.
For many years now we've scoured the earth and the sea in search of craft salts that bring flavor and beauty to your food and a deeper connection to food, people, and nature to your table. Along the way, we've met our share of spice growers and merchants. While I've always brought these discoveries into my own home, I've only shared them with you, my dear customers, on rare occasions. Well, it's high time we did!
Bitterman's single origin spices are gathered from around the world, in collaboration with expert spice hunters. We pack spices in small quantities to ensure freshness. We encourage you to use spices daily and replenish with a new box of spices as needed (hopefully, monthly!). Store in a cool, dry place.

Bitterman Turkish Oregano - Herby, earthy, zesty and fresh oregano buds from Denizli, Turkey. Sprinkle whole on fresh cheeses, grilled peppers and onions and roasted chicken. Or crush between your fingers and use as topping on pizzas, pastas, breads and more.
Bitterman Royal Cinnamon from Vietnam - Heirloom cinnamon harvested in the Quang Nam Mountains, near the capital city of Hue in Vietnam. Equal parts sweet and spicy, this will be your new go-to cinnamon for baking, braising, and enjoying simply on buttered toast.
Bitterman Black Lime from Guatemala - Limes, grown on a family farm in Alta Verapaz, Guatemala, are left to ripen and dry in the sun until they turn black and oxidize, then finely ground into a powder. Common in Persian cooking, use on roasted meats and veggies, soups and stews, or as a substitute to makrut lime.
Bitterman Smoked Chipotle from California - Jalapeño chili peppers grown on Fire Tongue Farms in California are smoked over fruit wood. Medium-hot, sweet chili flakes perfect for grilled meat and veggies, poached eggs in tomato sauce, homemade pizza. Try it as a topping on mango and pineapple! 4,000-6,000 Scoville units
Bitterman Cured Sumac from Turkey - Sour, salty, bright and vinegar-y sumac berries grown wild around Gaziantep, Turkey are salt-cured to preserve freshness. Sprinkle generously on top of hummus, dips and spreads, roasted chicken and veggies and more. or use in place of lemon juice in recipes.
Bitterman Wild Thyme from Turkey - Floral, piney, fresh and full-flavored sun-dried wild flowering hyssop thyme from Denizli, Turkey. Use to season a pot of brothy white beans, roasted chicken or pork, homemade buttered rolls, rice pilafs, homemade Za'atar seasoning.
