A sparkling elderflower cocktail fit for a Hugo. Light, bright and dreamy, this is the perfect summer cocktail for aperitivo hour. Serve with your favorite anitpasto - perhaps some prosciutto and melon, maybe an aged Parmigiano Reggiano, then kick back and relax and let your mind wander through a field of wild flowers.
¾ ounce elderflower liqueur
1 sprig of mint
4 ounces prosecco
Chilled soda water
8-12 dashes Peach Bitters
Add elderflower liqueur and mint to wine glass.
Muddle very gently with back of a bar spoon.
Add the prosecco, then top with soda water.
Add bitters to the top of the glass as a “float” and garnish with a mint sprig. Cheers!
