This white wine vinegar is crafted using a blend of local Dolomiti white grape varietals such as Riesling, Kerner, Incrocio Manzoni, Sauvignon, and Pinto Bianco. The resulting vinegar features aromatic floral notes of elderflower blossoms, acacia and citrus zest, grounded by strong mineral notes that harken to the Dolomites' famous volcanic cliffs.

Ideal for use in making a lively mayonnaise, salad dressing of delicate and tender greens such as mache, lettuces, endives and frisee, pickling and preserving vegetables to make a giardiniera. This white wine vinegar will add a sparkle of brightness to any recipe calling for white wine.
