Tasmania's millefiori 1,000 flower honey is gathered from the pasture lands of the lush wild southern island. The open woodlands and natural pastures of Northern Tasmania yield a rich and varied honey. The bees collect nectar, not only from the clover but also from the blackberries that divide the fields, the buttercups that grow along the mountain streams, and the wildflowers that are found in nearby forests.
Tasmanian Honey Company, founded in 1978 by Julian Wolfhagen, manages their own beehives. This ensures that their bees only collect nectar from areas that are free of unpleasant agricultural and industrial activities.
The Meadow's Classic Vinaigrette
- 1/4 cup White Balsamic Vinegar
- 1/3 cup Extra Virgin Olive Oil
- 1 teaspoon Tasmanian Meadow Honey
- 3 two-finger pinches of Bitterman's Herbes de Northwest
- Freshly ground black pepper
Combine all ingredients in mason jar. Put lid on mason jar and shake vigorously to combine, about 20 seconds. Serve immediately over fresh bitter greens. We like escarole, but arugula, dandelion greens or frisée works beautifully.
