This 85% bar crafted with cacao from the legendary Hacienda Victoria farm in Cerecita, Ecuador. These particular beans are of an Ancient Heirloom varietal dating back thousands of years, making this bean extremely rare. Stone Grindz gives this bar a light roast and a heavy conche to give it clarity of flavor unmatched at this percentage.
Single origin chocolate is taking beans from one farm or one central fermentary and bringing out the most outstanding flavor profile possible using only cacao beans, cane sugar, and cacao butter. Sometimes it takes upwards of 25 different roasting profiles to really dial in on the sweet spot for each bean. We don't believe in cutting corners.
