Kala Namak, or Indian Black Salt (also called Nirav Black Salt or Sanchal), is a special unrefined mineral salt from Darjeeling, India. It is a volcanic rock salt mined in central India. The ground salt is not black, but more of a coral pink or pinkish gray, and has a strong, sulfuric flavor. These colors come from the presence of trace minerals such as magnesium, as well as volcanic iron.

Kala Namak is used in Indian cuisine as a condiment, most commonly with snack foods. It is used in chaats (fruit glazes), chutneys, raitas (yogurt and cucumbers mixes), fruit salads, and savory deep-fried snacks. The finishing salt has a strong sulfur taste and smell. While this unique quality is often diffused when cooked, it nonetheless adds a special taste of eggs.

    I add this to my vegan egg recipes and it is a great substitute for the real thing. I’ve used other brands and this brand is definitely superior. Love it!!!

    Sulphur to delight the tongue

    I use the Kala Namak coarse grain salt as a finishing salt for a number of foods. Just a grain or two imparts a distinctive sulphurous touch of flavor to foods. On sashimi with stronger flavors it contrasts with the fish. On vegetables, there is an additional bit of umami to savor.

    great salt but packaging issue

    Not just me; i have read other reviews with same complaint: the seals on the jars are not correctly inserted causing damage to seal shape and salt grains get into the seal layers and then spill all over the place when opening the jar. Don't open near your laptop, iPhone or anything else made of aluminum - these little grains are very corrosive. Plus, some of these salts are quite expensive; they shouldn't be spilling unless its intentional. They are very nice jars; I wouldn't change that; the damaged seal thing is operator error at packaging
