This exceptional chocolate is crafted exclusively from Trinitario cacao, a variety known for its complex flavor profile and fine aroma. The beans are cultivated at elevations ranging from 500 to 1,500 meters, where the cool mountain air and rich soil contribute to the development of their distinctive characteristics.

The cacao undergoes two harvest seasons: the primary season from November to February, and a secondary season from April to June. This dual harvest allows for optimal selection of beans at the peak of ripeness, ensuring consistently high quality.

After harvesting, the beans are brought to a central fermentary where they undergo a carefully controlled fermentation process in wooden boxes. This method, combined with the subsequent drying on above-ground plastic mesh, helps to develop the beans' full flavor potential while maintaining their delicate nuances.

The resulting 70% dark chocolate bar is a testament to the skill of both farmers and chocolate makers. It opens with bright, zesty notes of pink grapefruit, perfectly balanced by the sweet, creamy essence of marshmallow creme.
