Claudio Corallo makes this chocolate bar using cacao beans from Terreiro Velho, Principe Island, Africa.

Claudio Corallo was the first chocolate maker to grown his own beans, initiating the "Farm to Bar" tradition. With over 40 years of experience in growing and producing chocolate and coffee, he is considered one of the highest experts in the matter. His farms are located in the two islands of Sao Tome and Principe in Africa, where the chocolate is produced on site. The cacao trees that Corallo grows on his plantation are the same plants that where shipped on the island by boat in 1819.

Flavor Notes: Fermented profile, with wood bark aroma, a very pleasant and subtle mushroom flavor and earthy finish.

Disappointed

I am a big fan of The Meadow and wanted to support this business during COVID-19 shutdown, so ordered special chocolates for spouse's b-day. This particular chocolate tasted of mold and we are pretty sure had gone bad - it was inedible. I emailed the Meadow to express this and never received a response. I am disappointed because I've always had good customer service before, and good chocolate experiences. Hope I get a response so I can keep being a fan of this local business! I DO NOT recommend this chocolate.

Thank you for your message and review. I am terribly sorry I am just seeing your email and review now. The Claudio Corallo is definitely a one of a kind experience and not for the faint of heart. The chocolate indeed is supposed to taste mushroomy! Claudio Corallo really pushes the boundaries of what chocolate can dare taste like.
