Using extremely fruity cacao beans from Peru in combination with some organic sugar, powdered buttermilk, and a hint of vanilla bean, Lillie Belle created a rich, tangy and not-too-sweet, original milk chocolate.

A note from founder Jeff Shepherd: "Lillie Belle Farms Chocolates began 20 years ago on a whim. I asked my daughter, Lillie and my wife, Belle if I could start selling truffles at the local farmer's markets and name them after them. They reluctantly agreed thinking that it was nothing more than a weird culinary phase. In the beginning it was all trial and error, but people kept coming back and demanding more. Without looking back, I dove head-first into the world of gourmet chocolates made in the grand traditions. Using the finest ingredients I could get my hands on, many of which I grew on my own organic farm, I set out to create a chocolate experience that rivaled the best in the world."

I love this bar. I got it and then was curious so I emailed the maker. They told me the browned butter added to the full cream buttermilk was the key. They explained that the catamelized malted milk ball finish I was getting was due to the long conche time coupled with high heat that does something to the milk sugars. It was more info than I wanted but it proved why this is the best bar I have bought in awhile.
