We teamed up with our friends at Roseline Coffee in Portland, Oregon - our favorite coffee shop with, arguably, the best cappuccino in our home city. Classic 51% milk chocolate topped with washed pink bourbon from Gabriel Castaño Buendía hits with notes of malt and tropical fruit.
A Note From Roseline
One producer who we have a lasting relationship with is Gabriel Castaño Buendía.We love having his Pink Bourbon on the menu. This rare coffee varietal is incredibly sweet with its pink coffee cherries, resulting in a cup with notes of chocolate cake, honeydew and grapefruit. In Southern Huila, Colombia, Gabriel is known as the godfather of Pink Bourbon for introducing Pink Bourbon to his fellow producers. On his two hectare finca, La Granada, he started anew by planting the Pink Bourbon variety that was not very well known at the time. He has now planted over 8,000 trees. Although Gabriel is getting on in age, and due to his health can no longer drink coffee, he says he wouldn't trade lives with anyone. His microlot of the Pink Bourbon variety was carefully hand-selected for ripeness and was treated to a prolonged fermentation. The cherries were weighed and kept intact for 70 hours, after which they were fermented for another 70 hours in tanks. The beans were then washed and put out to dry on parabolic dryers for 15 to 20 days. The resulting cup has delicate fruity and floral flavors.
How We Source Our Coffee
Roseline Coffee’s sourcing practices are based on the principles of fairness, transparency, and stability. We focus on a relational-based sourcing model, and use the “Sustainable Coffee Buyer’s Guide” (SCBG) to inform our buying decisions and determine the appropriate price levels for producers to achieve the living wage standard in the guide. Our program is predicated on three product categories: blend components, single origin offerings, and limited edition (auction and experimental) lots. Our “core four” origins, where we spend time, are Colombia, Honduras, Mexico, and Ethiopia. We work directly with producers and exporters to fortify our practices at the farm-level to facilitate informational exchanges, data, end-product reciprocation, and consumer preference data. The price we pay to coffee producers is always substantially higher than the ‘c’ market price of Arabica coffees – we have moved away from a ‘c’ market + premium model to a more transparent and fixed priced model based on the SCBG. This provides producers with more visibility into future prices and volumes that can be relied upon as a multilateral stakeholder. In many cases, we’ve worked with the same producers, organizations, and supply chain partners for more than a decade. We value existing producer relationships, and are constantly expanding our producer network to continue to offer our customers with a diverse range of blends, single origins, and limited edition coffees.
