Our finest fleur de sel, it offers unmatched sophistication for finishing all subtler foods, sweets, dairy, and cooked vegetables. The Fleur de Sel de l'Île de Ré is selected from the most accomplished (in our opinion) saunier ("saltmaker") of the saltmaking villages in western France. While each of the three saltmaking villages--Noirmoutier, Guérande, and Ré--along France's rugged western and northern coasts coast have their strengths, our Fleur de Sel de l'Île de Ré is possibly the most refined and subtle.
With a very faint rose tint and almost imperceptible scent of violets, Fleur de Sel de l'Île de Ré's fine crystals give a silken texture that puts this among the greatest of finishing salts anywhere. Mild, delicate, with the faintest hint of brine.
All this said, this finishing salt should not be saved for special occasions. In addition to being unsurpassed on broiled meats, fish, and vegetables, it is the best salt we have ever tried on French fries!
Like all our fleurs de sel it is harvested in the traditional, labor-intensive way, passing seawater through a network of dikes and ponds. On warm, windy days, saltmakers rake the purest, whitest layer off the top to make what many believe is the finest salt produced anywhere in the world.
