Capers are the un-ripened flower bud of the capparis spinosa bush that grows wild across the Mediterranean, picked and preserved in a wine vinegar brine. With a lemony tang and floral tartness, you'll undoubtedly find yourself topping all sorts of dishes with these tiny morsels of tastiness. Go mad with experimentation.
