XILLI is a collection of authentic, traditional and artisanal Mexican Salsas, Moles, Escabeches and Adobos representing our country’s true culinary heritage.  
These preparations have been staples in Mexican kitchens for centuries. Now we're making them by hand, elevating traditional recipes and using fresh ingredients, all while keeping conscientious methods in mind and heart. 
A staple of any authentic Mexican kitchen, “xilli” is the original Nahuatl term for chili (chile in Mexico). Chili remnants have been found in pottery from Puebla and Oaxaca, dating its use and cultivation as far back as 3000 BC.
In the Mayan region of Mexico, these pickled onions are a must-have for any of the Pibil dishes native to the region, including the famous Cochinita Pibil.
A bright and tangy way to liven up your dishes; a colorful accent for seafood, Ceviches, suckling pig, beef, Pibil dishes, and anything avocado.
