They now work with over 1,000 small family farms. By centralizing fermentation and drying they are able to control the quality of these flavour-building processes. With a rich fudge flavour, it is a natural pairing with the salt from the Vancouver Island Sea Salt Company.
Sirene is a family operated bean to bar chocolate making company based in Victoria, Canada. The focus of this company is to educate their customers about single origin chocolate, so they include two chocolate bars made with different cacao beans in each package with accurate descriptions on the ingredients and their differences.
