Ceremonial grade matcha, the highest quality of matcha available, is made from green tea leaves that are shade grown for three to four weeks. During harvest, the stems and veins of the leaves are removed, so that only the young tea leaves are left. The resulting flavor and texture is smooth and buttery, and a natural for incorporating into a vegan white chocolate bar.
