A micro-lot bean with an endearing sweet chocolate flavor and exotic origin. With so many beans in the craft market trending towards fruitiness (think, Madagascar, Belize, Tanzania) and others deeply earthy and loamy (Honduras, wild Beni Bolivia, Ecuador Camino Verde) this cacao produces a charming chocolate. Fruitiness helps to brighten chocolate, but too much can be a harsh glare; earthiness can be helpful to ground the higher notes, but can also seem just plain heavy. A balanced chocolate lover's chocolate is a nice respite.
A confession: when we make the first test batches we save it for reference. We had to repeat our test batches because, um, after a short while "sampling" and taking notes, there was not a smidge left.
