From one of our favorite regions in Italy - Puglia! We love this pasta with roasted tomato sauce and meatballs. Try it simply with broccoli rabe and chili flakes, or bake it with lamb ragu and cheese as they do in Matera. Cavatelli translates to "little ears" - not only is this fun eating, it's delicious to boot. 
Cook for 8 to 10 minutes until al dente.
