This sea salt is produced by a labor-intensive solar evaporation technique developed and perfected by our passionate salt maker on the Maine coast. Seawater is introduced into green houses where it is warmed and evaporated by the Atlantic sun. The seawater is then moved to pans where salt crystals are allowed to precipitate out.
The resulting salt crystals--warm, balanced, and naturally rich in trace minerals--are painstakingly hand-smoked over mesquite. Temperature and smoking time are carefully controlled in a process that took our saltmaker years to perfect. The resulting finishing salt has a hearty, medium-dense smoky flavor perfect for meats, cheeses, and salads.

I've been using this Mesquite smoked Sea Salt for years when I discovered it in The Meadow shop in Portland. It's a delight on ground beef/burgers, steaks, some vegetables and sometimes as a surprise to certain salads. I use it through out the week rather then having to set up the grill. All the taste and smell of out door grilling with out the mess. And it's smell doesn't get into my hair. ;-). I will continue to use it as a staple in my home.
I have been buying slat from The Meadow for years. The smoked salts are wonderful and really truly enhance the flavor of things. The red Alder salt on scrambled eggs....the best. The vanilla salt is amazing in baking and as a topping on muffins and even ice cream!
I have been purchasing this finishing salt for years. I find it an excellent finishing taste to all beef and some marinated vegetables. I would not be with out it as it enhances everything I would eat. I've bee Paleo for years and find this a great tool to bring in a topping taste without over whelming the food.
