Athena Sel Gris

From the deep blue seas, brought back from a trip to the Mediterranean: a suitcase-imported salt just for you!

A few blocks up from Athens' bustling Central Market and a stone's throw away from best souvlaki this side of the Mississippi (2 sandwiches, 2 each, eaten in 2 minutes), I made a find: a very coarse, decidedly mild grey sea salt with a sweet mineral finish. I immediately put it to use, first taste crushed and shaken over olive-oily oven-baked pita chips and garlicky homemade tzatziki: a revelation. Then on lamb chops and parsley relish. Then in a feta and spinach pastry.

Although it's unknown which came first, Athena, Goddess of wisdom, or Athens, city of the Gods, one thing is certain: this salt is a gift worthy of both. Grilled and roasted foods of all kinds, like the potato salad pictured. Rich dishes drenched in olive oil. Baklava!
