Bonajuto Chocolate is the oldest chocolate factory in Sicily. It was founded in 1880 in Modica, Sicily, by Francesco Bonajuto. The company has preserved the original "cold processed" chocolate making technique: the beans are stone grounded by hand on traditional metate (grinding stones) until turned into a paste and let to rest in their molds. This technique allows the chocolate's nuances to develop more strongly and the sugar crystals not to melt, the flavor and texture of this chocolate is there for among the most unique and authentic in the world.
This chocolate bar is infused with the traditional hand harvested sea salt from Trapani, Sicily.
